Baked Zucchini Fritters
Crispy baked zucchini fritters with yogurt dip.
Ingredients
- 1 large zucchini, grated and squeezed dry
- 1 egg
- 1/4 cup parmesan
- 1/4 cup breadcrumbs
- 1/3 cup Greek yogurt
- Salt and pepper
Instructions
- Mix zucchini, egg, parmesan, breadcrumbs, salt, and pepper.
- Form small patties on lined tray.
- Bake at 425F (220C) for 18 to 20 minutes and serve with yogurt.
